Walking down the humble streets of  Tecate during flea market days is a sight to behold; young children and their mothers roaming the dusty streets, searching for a good deal. There are make-shift salesmen getting their wares and trinkets out on tables and blankets, organizing things in immaculate row after row. During the early morning, there is a gloom that locals can only describe as “Tecate Grey”. The chirping and humming of the birds are familiar sounds; both of the avian and deal-seeking variety. The true highlights permeating over the scene are food vendors by the handful sprinkled all through out the market. The most attractive aroma was that of the freshly baked dread just a few stands away.
Panaderia La Canasta  is a corner bakery right next to where the locals hold their flea markets.  When I walked in, the racks were full of sweet breads,  Conchas, Orejas, Pinguinos, and various glazed, custard-filled and sugar powdered delectables. All of them made and decorated by hand. They looked beautiful and smelled even better. In spite of all the deliciousness about me, one particular rack caught my eye.  The rack filled with fresh-baked torta bread. These were no regular torta breads as they were filled with meats and cheese and jalapeño slices. I promptly picked two different varieties, the chorizo and the sausage bread.  The sausage was perfectly browned and crunchy, an excellent contrast to the milky smooth goat cheese The little something from the jalapeño was a very welcome pop and brought the bread together. The chorizo however, was a bit too greasy and made the cheese runny. For those not familiar with chorizo, it is a spicy breakfast meat, usually in sausage form, made south of the border. The jalapeño in this piece was not welcome. It brought an added amount of heat that did not let me enjoy every facet of the bread(like putting raw ghost chilli in your mouth). The bread in both cases remained flaky and the overall flavor was pretty good. I would have preferred it with more crunch.  I recommend the sausage and cheese roll, just bring it home and pop it in the conventional oven for an added crunch.
